Many people don’t know how to cook tofu. Because of this, many see it as a bland food and are reluctant to cook it. In reality, tofu lends itself very well to many dishes. Because of is unique texture, it absorbs sauces and marinades perfectly. This tofu casserole is sweet and salty at the same time. The cubes of tofu are first lightly fried in oil, then simmered in a very fragrant sauce. It’s easy to make, and it’s the absolutely delicious—test it and you will see! The result is a tender and tasty tofu. Prep time:  15 minutes Cook time: 15 to 20 minutes Servings: 4 Ingredients 400 g tofu 1 zucchini 1 onion 1 teaspoon thyme 1 bay leaf 1 ½ cups of vegetable broth 1 tablespoon cornstarch ¼ cup soy cream the juice of a lemon Preparation Peel & dice the onion. It is spicy and seasoned with sea salt. It’s a simple recipe, refreshing, nutritious and not expensive to make. The recipe is basic and open to any addition or removal of ingredients according to your preferences. Prep Time: 20 minutes Servings: 8 Ingredients cold water as needed 50 ml of extra virgin olive oil 25 ml of red wine vinegar salt to taste 1 kg of tomatoes 1 garlic clove, peeled 1 onion, chopped, 2 cucumbers in sections, 2 chopped green peppers, Preparation Dip the tomatoes in a pot of boiling water for 30 seconds. Here’s an easy-to-make vegan bar filled with chewy granola in a soft dough. It’s a kind of a cross between a granola bar and a blondie bar. Perfect as a mid-afternoon snack with coffee or tea, an on-the-go breakfast, or to pack in the lunchbox. Adapted from The Vegetarian Family Cookbook. Makes: 8 bars 3/4 cup whole wheat pastry flour 2 tablespoons hemp seeds, ground flaxseeds, or wheat germ 1/2 teaspoon baking soda Pinch of salt 2/3 cup applesauce 1 heaping tablespoon nut butter, optional 1 cup granola of your choice (homemade or store bought) 1/2 cup raisins or currants 1/2 cup vegan chocolate chips Preheat the oven to 350 degrees F. Combine the first 4 (dry) ingredient in a mixing bowl and stir together. Make a well in the center of the dry ingredients and pour in the applesauce and optional nut butter. Today, the recipe that I propose is a tartar of beetroot with mint. It’s an entree that is both pretty and very light. But beware not to use canned, but fresh beet! In fact, this beetroot tartar and mint is more of a salad. What we are going to do is cut the cooked beetroot into small pieces, then season with mint vinaigrette. Beetroots are rich in B vitamins, iron, manganese, copper, magnesium, and potassium. A diet rich in these things is believed to result in improved blood pressure, improved cognition, and reduce accumulation in your liver. This tofu peanut sauce recipe that I present to you today could be served in many ways. I decided to serve my peanut sauce with a salad, but you could very well serve it on rice vermicelli, stir-fried vegetables, rice, or whatever else you may prefer. What I found particularly revolutionary about this recipe was that the cubed tofu is cooked on a baking tray. To begin, you must remove as much water as possible from your tofu. This is the base when cooking with extra-firm tofu. Normally, I leave my block 30 minutes before making the recipe, remove the water from the package, place it on a plate with paper towels, place another layer of paper towels on top covered by another plate, then put a weight on top (a can of diced tomatoes, for example, is perfect). I then let it sit for 15 to 30 minutes. This way, we make sure that the water is completely drained from the tofu. First, replace the egg with applesauce, which in turn gives the cookie the extra sweetness needed to cut the sugar in half. We’ve been enjoying using einkorn flour for baking — it makes baked goods really tender and naturally lower in gluten, but these cookies are great made with spelt or whole wheat pastry flour. This smoothie brings back happy memories of eating gobs of pistachio ice cream with my cousins at Jones Beach. Pistachio was always one of my favorite flavors. The texture is smooth and thick like an old-fashioned milk shake. Pistachios contain large amounts of antioxidants, beta-carotene, vitamin E and lutein compared to other nuts. They are also lower in calories than other nuts and are loaded with flavor and healthy fats. Contributed by Helyn Dunn, from  Helyn’s Healthy Kitchen.
